Choline in foods and function
Choline, found in foods as varied as liver, beef, eggs, and chocolate, plays an important role in the formation of cell membranes, which make up the outer sheath that keeps cells intact. In addition, it works as a building block for the neurotransmitter acetylcholine and other chemical messengers in the brain.

Choline in our diet and in food, dietary intake
This nutrient, usually as part of phosphatidylcholine, or lecithin, is present in a number of foods, particularly eggs, fish, legumes, nuts, and meats, as well as in human breast milk. Dietary intake of choline in a healthy diet ranges from 300 to 900 mg a day. Most individuals who have a normal diet are not likely to be deficient in choline, however there are certain people that, even with a good diet, may still not get enough choline for optimum health and thus have a deficiency of this important nutrient. In the past it was thought that the human body made adequate amounts of choline when needed. However, studies have shown volunteers on a choline deficient diet are not able to produce enough of this nutrient.

USDA guidelines, daily consumption
The United States Department of Agriculture (USDA) recommends that men consume daily about 550 milligrams of choline a day and women about 400 milligrams. This minimum choline intake each day should prevent liver dysfunction. However, some individuals may need up to 800 milligrams of choline each day to prevent or reverse the damage caused by a deficiency of this nutrient.
